Recipe: Vegan Protein Cookie Dough Bites

Ingredients (Makes about 16 bites):
- 1 cup chickpeas, cooked and drained
- 1/4 cup almond butter
- 1/4 cup maple syrup or agave nectar
- 1/2 cup oat flour
- 1/4 cup BioHealth Nutrition's Chocolate Phyto Perfect protein powder
- 1/4 cup dairy-free chocolate chips
- 1 teaspoon vanilla extract
- Pinch of salt
In a food processor, combine cooked chickpeas, almond butter, and maple syrup (or agave nectar). Process until smooth and creamy.
Add oat flour, BioHealth Chocolate Phyto Perfect protein powder, vanilla extract, and a pinch of salt to the food processor. Process again until all the ingredients are well combined and form a dough-like consistency.
Transfer the dough to a mixing bowl and fold in the dairy-free chocolate chips. Make sure they are evenly distributed throughout the dough.
Using your hands or a cookie dough scoop, portion out the dough and roll it into bite-sized balls. Place the bites onto a baking sheet lined with parchment paper.
Once all the dough has been rolled into bites, refrigerate them for about 30 minutes to allow them to firm up.
